1.Whisk the Brown Sugar Glaze:2 min.

In a small mixing bowl, whisk together 2 tbsp brown sugar, 2 tbsp soy sauce, 2 tbsp Dijon mustard, 1 tbsp Worcestershire sauce, and 2 tsp minced garlic until the sugar crystals are mostly dissolved.

2.Dry and Season Pork Chops:2 min.

Thoroughly pat 4 bone-in pork chops dry with paper towels (moisture prevents searing). Season lightly on both sides with fine salt and freshly cracked black pepper.

3.High-Heat Skillet Sear:6-10 min.

Heat 1 tbsp olive oil in a large skillet over medium-high heat until shimmering. Add the pork chops and sear undisturbed for 3 to 5 minutes per side until a deep golden-brown crust forms.

4.Simmer and Baste Glaze:2-4 min.

Reduce heat to medium. Pour the brown sugar mixture evenly over the chops. Allow the sauce to simmer and bubble rapidly, continuously spooning the thickening glaze over the meat and flipping once until glossy and the internal temperature reaches 145°F (63°C).

5.Rest and Serve:5 min.

Transfer chops to a warm plate and let rest undisturbed for 5 minutes to lock in juices. Spoon remaining pan glaze over the chops and serve immediately.
