Delicious Brown Sugar Pork Chops

1. Prepare the Pork Chops
Remove the pork chops from the refrigerator about 15–20 minutes before cooking so they can lose some of their chill.

Pat them thoroughly dry with paper towels. This is important because dry pork chops brown much better.

Season both sides with:

Salt
Black pepper
Garlic powder
Onion powder
Smoked paprika, if using
Press the seasoning gently into the meat.

2. Prepare the Brown Sugar Mixture
In a small bowl, combine the brown sugar with the optional thyme and rosemary.

Set it aside.

The brown sugar will later combine with the butter and pork juices to create the delicious caramelized glaze.

3. Heat the Pan
Place a large heavy skillet over medium-high heat.

Add the olive oil.

Once the oil is hot, carefully place the pork chops into the skillet.

Avoid overcrowding the pan. If necessary, cook the pork chops in two batches.

4. Sear the Pork Chops
Cook the pork chops for approximately 3–5 minutes on the first side, depending on thickness.

Do not constantly move them around. Let them sit undisturbed so they develop a beautiful golden-brown crust.

Flip them and cook the second side for another 3–5 minutes.

The exact cooking time depends on the thickness of the chops.

🧈 5. Create the Brown Sugar Butter Glaze
Reduce the heat to medium-low.

Add the butter to the skillet.

Once melted, sprinkle the brown sugar around and over the pork chops.

The butter and sugar will begin to melt together and form a shiny sauce.

If using Dijon mustard, add it now and stir it gently into the butter mixture.

You can also add a splash of apple cider vinegar or lemon juice. This gives the sweet glaze a little acidity and keeps it from tasting overly sweet.
