Ingredients
2 cups heavy cream
8 ounces graham crackers
4 to 5 fresh peaches, peeled and thinly sliced
Directions
1. Peel the peaches and slice them thinly. Set aside a few pretty slices for the top if you like.
2. In a large bowl, whip the heavy cream until soft to medium peaks form. The cream should be thick and spreadable but still soft enough to settle into the layers.
3. Spread a thin layer of whipped cream in the bottom of an 8-inch square or similar small glass dish. Add a layer of graham crackers, breaking them as needed to fit, then spread on whipped cream and arrange a layer of sliced peaches. Repeat the layers until all the ingredients are used, finishing with whipped cream on top.
4. Smooth the top, add the reserved peach slices if using, then cover and refrigerate for at least 6 hours or overnight so the crackers can soften into a cake-like texture.
5. Slice and serve cold straight from the dish.
Variations & Tips
Choose ripe peaches: The best flavor comes from peaches that give slightly when pressed and smell sweet at the stem. If the peaches are hard and under-ripe, the dessert will still work, but it will not have that juicy, sun-ripened taste that makes this recipe special.
Let it rest long enough: Icebox cakes need time more than anything else. An overnight chill gives the graham crackers time to soften into tender layers, so if you can make it a day ahead, you will be rewarded with a prettier slice and a better texture.
Keep the cream cold: Very cold heavy cream whips faster and holds its shape better. If your kitchen runs warm, chill the bowl and beaters for a few minutes before whipping.
Try a rustic version: If you do not care about tidy slices, you can roughly crush some of the graham crackers and fold a handful of peaches into part of the whipped cream for a more spoonable, pudding-style dessert with the same flavor.
Make it extra pretty: For a nicer finish, save your most even peach slices for the top and lay them in a simple fan pattern. It is still as easy as ever, but it gives that humble reunion dessert a little Sunday-company charm.
