Step 1: Cook the sausage
In a skillet over medium heat, cook the sausage until browned, breaking it into small crumbles as it cooks. Drain excess grease well.
Step 2: Add ingredients to slow cooker
Lightly grease a 2–4 quart slow cooker. Add the cubed cheese, cooked sausage, and the entire can of diced tomatoes with green chilies.
Step 3: Slow cook
Cover and cook on LOW for 1½–2 hours or HIGH for about 1 hour. Stir every 30 minutes to help everything melt evenly.
Step 4: Stir until smooth
Once the cheese is fully melted, give the dip a good stir until creamy and well combined.
Serve warm with tortilla chips, crackers, toasted bread, or fresh vegetables for dipping.
