2. Cover and cook on low for 7 to 8 hours, or until the beef is very tender and easy to shred with a fork.

3. Remove the lid and shred the beef right in the slow cooker, stirring it into the sauce so the mixture becomes thick and hearty.

4. Meanwhile, cook the egg noodles in salted boiling water according to the package directions. Drain well.

5. Stir the cooked noodles into the beef mixture, cover, and let everything sit on warm for 10 to 15 minutes so the noodles soak up some of that creamy flavor. Spoon into bowls and serve hot.

Variations & Tips

For a richer sauce: If you like a creamier finish, stir in a small spoonful of softened cream cheese or a splash of extra evaporated milk at the end. That helps loosen the sauce if the noodles absorb more liquid than expected.

Try a different noodle: Wide egg noodles are traditional and hold the sauce beautifully, but rotini or medium shells work well too. Just cook them separately and add them at the end so they do not turn overly soft in the slow cooker.

Make it a fuller meal: A handful of sautéed mushrooms, peas, or chopped parsley stirred in before serving can give the dish a little color and stretch it even further. That is especially handy when feeding a table full of hungry people.

Slice before cooking if needed: If your round steak pieces are large, cutting them into a few smaller sections helps them fit down into the cooker more evenly and makes shredding easier later on.
